 Post subject: Grilled Duck Breast

Get a duck breast and remove the breast bone. Then marinade it in oil (any kind will do), Balsamic Vinegar, and your favorite spices (I like chives, garlic, thyme, salt, and onion powder, maybe some others if I feel like it). If you really want it fast you can omit the oil, vinegar, and spices and simply use Italian Dressing. Let this sit for at least four or five hours (I prefer overnight, it's more tender and less gamey).

When it's done marinading grab yourself a Jalapeno. Split it and remove the seeds. Then stuff it with cream cheese. Insert in middle of duck breast.

After this wrap your duck breast with bacon and hold in place with tootpicks. Cook on LOW heat until bacon is done. Your duck will be moist, the Jalapeno crunchy, and the cream cheese melted.

Make sure you married folks keep the wife away when you chow down, cause you'll smack her after you eat this. If you do anyway, it's all worth it. :lol:
