One of my favorite recipes, and with Dove season upon us, I think a good choice.

6 Doves, debreasted (12 breasts)
1 large onion, sliced
2 Tbs Butter + some ( you may need to add some just to reduce sticking to the pan later on )
2 Tbs Brown Sugar
Salt
Pepper
About half a can of Beer (I like Miller for mine)
2 Tbs Bourbon


Heat butter, onions and brown sugar in pan until carmelized. That takes about 15 minutes, give or take. Season with salt and pepper to taste, and set cloved breasts in the sauce, flat side down. 5 minutes (all while stirring) later, flip breasts and continue to stir while cooking for an additional 7-10 minutes until cooked through. Add beer, bring to boil, turn down to simmer and cook covered for 15 -20 minutes. Toss with bourbon. Serve over wild rice. :)
