Post subject:  Bruinswick Stew

This is an old Colonial receipe that was really popular in Virginia. It tastes good on the first day, but it tastes great the second. If I have time and I am making it at home I make it one day and put it in the fridge, then heat it up and serve it the next day. Also, a great way tu use up all those little bits of meat you might have lying around, but de-bone the meat first, choking on Chipmunk bones isn't recommended.

Fry up two large white onions in one can of medium beer (lager is best).
One and a half pounds (or half a bird) of chicken (cubed or sliced).
Half pound of rabbit (cut up like the chicken).
Half pound of squirrel or Chipmunk (cut up like chicken).
Two cups of corn (or two cans).
Four large ripe tomatoes (or four cns of diced tomatoes).
Two dozen green beans, chopped (or one can).
12 small Baby Portabello Mushroms (or three cans).
Two large whitepotatoes (or four little red ones).
One large hand-full of Ocra (or one cup of Ocra).
Season with marjoram, thyme, black, white and cayenne pepper, salt and a tiny bit of dill.

Allow to cook for about two hours, cool, put in fridge overnight and reheat for dinner.

Doc,
This was originally a dutch oven recipe, but I have made it many times in a stainless pot on the stove. Of course cast iron makes everything taste better in my opinion.

You're right about that! Have you ever tried substituting other types of meat, such as wild turkey, deer , or even bear?

Sounds a lot like what we used to call a Mulligan Stew in deer camp. Say Doc, if you have a Dutch Oven, we can put one of these together while I'm out visiting.

I don't have a dutch oven yet Swamp Rat, but I am going to try this either in the crock pot or a pot on the campfire! We'll substitute turkey for the chicken, and maybe omit the chipmunk!

Sounds good....as long as you aren't planning on substituting rattlesnake for chipmunk! :x Squirrel would be a good alternative. See if your daughter will go out and shoot us a couple.
