1 Young, fat possum
2 T Butter
8 Sweet potatoes
1 T Sugar

First, catch a possum. This in itself is excellent entertainment
on a moonlit night. Skin the possum and remove the head and feet. Be
sure to wash it thoroughly. Freeze overnight, either outside or in
a refrigerator. When ready to cook, peel the potatoes and boil them
tender in lightly salted water along with the butter and sugar. At
the same time, stew the possum until tender in a tightly covered pan
with a little water. Arrange the taters around the possum, strip
with bacon, sprinkle with thyme or marjoram, or pepper, and brown in the
oven. Baste often with the drippings.

One thing I've learned through my life trapperboy is don't knock it till you tried it. There's some things that I thought I would never try, like a peanut butter, mayonase, and cheese sammich, but I tried it and it was delicious. This may be the same way. I'm going to give it a shot when I get a possum sometime.

Thanks for the unique recipe mopar.

I like trying new things. I've even eaten live moths around the campfire on a dare from my daughter, but I don't think I could eat a possum. Maybe on a good moonshine drunk.LOL.

one time at my friends camp we went down to the stream, there were lots of craw fish and salamanders.
i picked a craw fish up (live) and bite off and ate its tail...
swallowed it and threw the rest of him back in
it wasn't too bad
it was alive and raw

An old man once gave me his secret recipe for Possum and Taters....he said catch a young fat possum, feed it corn for a few days, then find a young sugar maple tree and cut it down and hew a slap board out of it about 2 ft long, then clean your possum and spread it open on the board made from the sugar maple set it in front of a small fire, wrap the potatoes in foil, place them in the coals.....when just about all the grease has cooked out of the possum remove it from the board, remove the potatoes from the coals....throw away the possum and eat the toasted sugar maple board with the potatoes. I reckon I should have posted this on Preacher's JOKE PAGE.....sorry

Never had armadillo but between coon n rat I like rat the best. You can have all the slicktails/grinners I catch, lol, I aint eatin none of them. Story goes armadillo's are moving into Illinois so I imagine we'll be trying them eventually. Secret with coon is to keep it up out of the drippings and to cook it slow. Younger the better of course. With the cheap coon price's predicted we'll be targeting nuisance young coon to eat and tan the hides for something.

LOL, thats been my argument for eating mountain oysters for years. Trust me chickens, geese or any other critter you can think of doesnt have the aroma/odor of a slicktail when he's cooking  . We've raised chickens on and off for years, but, Ive never seen where their diet affected their flavor/aroma as much as a possum's(insert upchuck icon!). Jase just give me the word and I'll send ya all the possum recipes you'll ever want to try. If the postage aint too high I'll even send ya the main ingredient :D. As for me, I'll eat grass, worms and mud first before ever even trying to cook a slicktail again. I learn from my mistakes :D .
