How sharp does a fleshing knife need to be for coons?

Sharp. And keep it that way. I sometimes sharpen it halfway through the process, but definately a touch up in between coons.

I follow the advice of many trappers and use the skinner just for skinning and another more sturdy blade for muscle, tissue, and bone.
