Depends on if you want (REAL JERKY LASTS FOR YEARS)or meat snacks!
I use soy sauce (salt water works but turns meat gray) and honey.
These cure it and preserves the meat/ flavors are your choice.
I like garlic,pepper,onion,jalepeno pepper(just the meat no seeds or membrane juiced)!
Mix 1 bottle soy sauce with 3 bottles water
add 1/2 cup honey, more if you want it coats it nice smooth jerky.
dry in low heat 120 and no more than 140,when it splinters as you bend it it's done

LOL make as even 1/4 in thick pieces as you can before you put in brine.
soak over night drain then dry(DON'T COOK)
I'VE EATEN THIS 2-4 YEARS LATER AS LONG AS YOU KEEP IT COOL AND DRY!
Kept in an inside closet/never put in icebox
You can go anywhere you want from there as far as flavors go ezcept vinegar
