Post subject:  Chicken Fried Bobcat

First off---I haven't tried this recipe--It is one of the recipes in the NTA TRAPPING HANDBOOK. "Contrary to some opinions, bobcat meat is very mild in taste. Young bobcats are more tender than the older bobcats. Many trappers prefer to use just the hams and front legs and shoulders for cooking. An overnight soaking in salt-water removes blood from the meat. The meat can be boned, cubed, or sliced, and fixed in a variety of ways. Bobcat is one meat that can be fried just like chicken, and it is also good when made into roasts or stews.

Bobcat Recipe-Remove all fat from the flesh of the legs, and cut the bobcat flesh into serving sized pieces. Place the meat in a pan and cover it with milk. After it has soaked 45 minutes, salt and pepper to taste, and roll in flour or cornmeal. Fry in hot bacon fat and serve hot."
