cut the head off and removed the guts.
then i rinse it off and covered it in enough salt to have 1/4 of an inch coverage all over.
let it sit at room temp for one hour and then put it in the smoker with hickory chips and hickory liquid smoke.
Smoke it for 10 hours at 180 degrees and PRESTO! the best carp you will ever taste.
I eat it like smoked salmon, on crackers with cream cheese.

I have never eat carp and wondered how you would cook them.This soods good!

Do you wash of the 1/4 inch salt before you smoke??
