I've used skinned, cut up beaver tails in beans to provide flavor as well as extra calories.. This was commonly done in the lower Musselshell River area by old time settlers, homesteaders and trappers.

I've also had the tail skinned, and cut into strips and roasted slowly in front of a fire, making it somewhat like bacon flavored. Of course roasting the tail in front or over a fire, will add to the flavor of stews and soups.

Its really good slow cooked in ham n beans too. If you like fat. It reminds me of the taste n texture of ham fat an a little rind in the beans. Lotta flavor in it.
