Got turned on to this a couple years ago, eat it all the time.

Fry cubed potatoes till brown.
Add diced onion.

Basically you are making obrien potatoes. You can even start with a bag of frozen obriens.

When potatoes browned and onions almost done, add whatever boned cubed fish you have. Drained jarred fish would work. We use mostly halibut, its not very fishy. Salmon is good, but you have to bone it first. I'm sure some other white freshwater fish would be good as well. Cook until fish is done.

As simple as you can get, easy to prepare, and very tasty. Had it for dinner last night.

i never really thought about using halibut, i do very similiar with my salmon leftovers, I usually flake all the meat and debone it, then i pan fry with brownsugar, lemon pepper, old bay, and garlic salt to taste. I try to brown it as much as i can, then i add it to the same potatoes as you described.

Then to top it off i crack a couple eggs into it and scramble all together, then top it off with alittle chedder cheese! I will definitely have to try it with halibut or lingcod though never really thought about using white fish for it!
