Time to get smoking. Took out my 15 and 8 pounder today. Figure the two will be enough to fill the smoker. Cleaned up and in the brine.

Looking good there Wolf. Care to share the brine recipe?
Butchering the hog here tomorrow[if the wind goes down and it should as the wife is heading to Wolfs area]. I gotta unthaw the dang smoker as the lads didn't put it on boards to let it release. :roll:

1/2 cup of coarse salt ( as I do not like salty smoked fish ) and 1/2 cup of brown sugar. Let sit over night and rinse in morning and let dry for 1/2 hour. Smoke for 4 hours at 200 and last hour of smoke I apply maple syrup twice.

If your wife is headed this way tomorrow, Ottawa just got hit with a big snow storm. 18 inches so far my son says and still snowing. My area is 1000 miles take or give some from there. I could drive to your place in less time then I could Ottawa. And I would sooner go to your place

I bet Swamp never has these problems eh. :lol: I don't have to worry about busting the caster feet off the smoker[fridge] as we did that last year. :lol:
Wife is looking for taller snow boots and a toque as she ain't needed them here this year. :shock:

Nope, not much trouble with ice and snow here. I do now know the difference between a "toque" and a "toboggan".

Yepper, I was told QUICKLY and OFTEN that a toboggan was a sled, not a hat! :shock:

No one will ever know for sure on that one, but if you look closely you will see he is still wearing his hunter hat under the toque. For some reason wearing the hat and then the toque doesn't mess up the hair as much. :--?

TT how did your wife make out with her flight to Ottawa, probably quite around there now and your eating popcorn and watching the hog report on TV. :--)

The wife says she is loving the snow in Ottawa as she will be leaving it behind on Sunday. :lol: I ain't had popcorn yet as I been busy hog killing/cutting/brining and running the lad around for curling/basketball and such. I even missed a party last night. :roll: I'm gathering so many Brownie points it'll probably take me a whole 5 minutes to blow them. :lol:
