Tips for easy peeling hard-boiled eggs......

Roll them around with a spoon while they are boiling, then pour out the hot water and run cold water on them and let them soak in cold water.

I move some of my bro's and SiL's chicken eggs at work. The Chinese guys have asked about duck eggs. I think they like them but alas no quackers out at the country place :| ...

   I bet it is! I would like to try one of those. I always threatened that taking out an emu with my turkey gun would be a hoot. My grandma used to make noodles out of duck eggs and they were fandangtastic!!!

I use to raise ducks. The best layers who rival the best of the chicken layers
Are the Kahkii Campbells. Not only are they great layers but forage very well also.
Duck eggs are richer in the sence that the yolks are a bit darker. The only dis
Advantage to them if u bake is that the whites don't whip up as well as chicken eggs do.
Try one if u get the chance. Given a choice id take duck eggs anyday. The shells are harder too.
