As you all know, RayElla and I have been trying lots of different meats over the last few years : ......... Gator, wild hog, rattlesnake , muskrat, etc.

Well, after Rick left yesterday, I was working on my lawnmower and noticed a groundhog down at my barn, which is very close to my garden. :evil: :evil: :evil:

So I smacked it with my 223 and went down and it was a nice young female. 8) 8)

So I skinned it out and soaked it overnight and fixed it up this evening.

Surprisingly, Ray was a little hesitant to try it, :--? :--? but after a small bite she dipped out a big spoonfull. :wink: :wink: :wink:

Whoever invented brown sugar barbecue sauce was a frickin genius. :lol: 8|- 8|- 8|- 8|-

I have to say it was pretty good...... tasted alot like beef, which isn't surprising since they both eat a lot of grass. :roll: :roll: :roll:

I would definitely eat it again.

The big red thing on the left is a red baked potato that my wife made.......... doggone good but don't tell her.... :lol: :lol: :lol: :lol: ................ and the stuff on right is my very own pickled cauliflower which is almost as good as Bud light ............. 8) 8) :lol: :lol: :lol: :lol:

Rick, groundhogs don't last long around here, Roxann and RayElla are tough on them too. :lol: :lol:

If your interested Doc, I know of a weather predicting groundhog that needs dusted in Punxsutawney, PA, you know the one that predicts early springs..... :twisted:

They say armadillo is supposed to taste kind of like pork...... :twisted: :twisted:

Soft-shell turtle is also delicious. Mix some seasoning with flour/cornmeal and deep fry chunks of the meat, and youll be hooked. When we set banklines, any catfish or turtle on the hook doesnt stand a chance

Jase I also looked into the leprosy deal with armadillos a while ago. From what I read, it seemed to be an isolated incident in Texas? The soil conditions were thought to be ideal for the leprosy bacteria, and the armadillos acted as a host for them. And also with some "armadillo farmers" or such during the Depression, who were in constant contact with the critters. But again, that is just from a small bit of reading I've done myself.
