As most of you know, I have been known to eat some strange things........ crawdads, moths, snake, octopus, ........ :mrgreen: :mrgreen:

a good friend came over today and I fried us all up some egg sandwiches.

No big deal, except I used a duck egg for my sandwich. :--? :--?

Best egg I ever ate. :shock: :shock: Put those chicken eggs to shame.

Ducks gonna eat a lot better from now on. :wink: :wink: :wink:

Well are you guys totally sick of me yet??? lol Did I hear ALMOST !!!! :evil: :lol:

I use to raise ducks for eggs. The best ones are Khaki Campbells. They lay almost as often as a good hen, and they are excellent foragers so you don't have to feed them as much as other ducks. ( Murry McMurry Hatchery) They also stick around the homestead. I had some fancier ones once who never stayed home and the yotes got them. Excellent for ridding your area of grasshoppers. and do well in gardens after they are established for getting insects. Watch them though, they like tender greens.
And yes, duck eggs taste wonderful compared to these thin shelled, green yolk, antibiotic ridden store bought hen eggs available these days in stores. The yolks are a deep yellowish orange.. but... the whites don't whip up as nicely as hen's eggs for all you merangue whippers. Khakis have enough meat to be butchered when their laying days have passed, so don't name them !!! :P

I bet my Chinese colleagues (customers) would eat duck eggs. They eat about anything.

doc- Your list didn't look to bad except the moths. I think I'd have to be pretty hungrey to start eating bugs...

Musselshellgal- Naw, you're a nice addition to have around (at least in my opinion). You have a lot of interesting stories and life experiences. I've never made it through the Musselshell country. I ran across northern MT at the end of sept. for work but stayed north of the Missouri. Looks like a neat region to check out sometime...
